| If it's crunch time and you need to cream butter for a baked treat (like our January Bakeable contest recipe, Vanilla Bean Cupcakes!), you'll have to soften the butter quickly. I have a few methods for speeding up this process, including cubing it, rolling it out between two sheets of waxed paper and mixing it on the lowest speed for a longer amount of time. But my favorite is the fastest method: shredding it with a box grater. Aside from the fact that it dirties an extra dish, this technique is so simple. Partially unwrap the butter. Then, using the wrapped half as a handle to keep your hand clean, shred butter using the largest holes of your box grater. The butter will reduce to a fluffy heap, similar in appearance to shredded mozzarella cheese. These small pieces will soften faster, so you can use them in your recipe almost immediately.
