It takes longer than you think!
| | I'm a "go-go-go" person, and baking chills me out. Many aspects of the beloved activity take time, but one often overlooked technique that simply cannot be rushed is creaming butter and sugar, which aerates batter for fluffy, light treats. Many recipes say to cream butter and sugar without specifying for how long, but depending on your mixer, it can take up to 7 minutes! To cream properly, cube softened butter and place in mixing bowl. Next, add the sugar. Start your mixer on medium speed. Then, as sugar is incorporated, increase speed. Beat together until the mixture is light in color and fluffy, about 5 minutes. Scrape the bowl and beaters with a rubber spatula periodically throughout mixing to ensure all bits of butter are mixed in. As you cream the softened butter and sugar, watch as the mixture changes. At the beginning, it looks like wet sand, with crystals of sugar visible. Then, slowly, the mixture becomes lighter with peaks. | | |
