What Should I Use When I'm Out of Whole Milk?
Not everyone keeps whole milk on hand, but many recipes call for the ingredient. To solve this issue, a smart baker friend of mine shared a tip with me: Keep a can of evaporated milk on hand. The shelf life is one year! Thankfully, there are
multiple substitutes for whole milk
to choose from when you're short.
1% Milk:
Use the same amount of milk as called for in the recipe, plus 1 tsp. cooled melted butter per cup.
2% Milk:
This is a direct substitute, so use the same amount of milk as called for in the recipe.
Half-and-Half:
Use three parts half-and-half and one part water or skim milk to equal the amount of milk called for in the recipe.
Heavy Cream:
Use half heavy cream and half water or skim milk to equal the amount of milk called for in the recipe.
Non-dairy Milk:
This, which includes soy milk, nut milks, etc., is also a direct substitute.
Evaporated Milk:
Use half evaporated milk and half water to equal the amount of milk called for in the recipe.
