How Do I Ensure My Cheesecake Doesn't Crack?
I've been making cheesecakes look pretty for the camera for almost 20 years. There are a
few techniques
to help guarantee your cheesecake won't crack as it cools, such as greasing the pan and baking your cake on the middle oven rack, but one of the most important is placing your cheesecake in a water bath.
You can use the water bath technique (also called a
bain-marie
) with any cheesecake, regardless of whether the recipe specifies. All you need is a large, high-sided pan, foil and hot water. Wrap your springform in foil, then place it in the large pan. Fill the large pan with boiling water and bake as normal.
The water bath helps bake the cake evenly and creates a moist atmosphere that prevents the cake from drying out and cracking.
And if cracks do occur, the good news is that they don't affect flavor. For simple, sweet solutions to concealing cracks, try chocolate ganache, whipped cream, crushed cookies or fresh fruit. Yum!
