How Do I Make Rolled Dumplings?
We have several chicken-and-dumplings devotees on our staff. Catherine Ward, our prep kitchen manager from the Midwest, loves this down-home dish with rounded dumplings. Our food editor, Rashanda Cobbins, a Southerner, prefers flat dumplings. No matter how you decide to do your dumplings, this dish is cozy deliciousness.
To make Rashanda's
favorite dumplings
, combine 2 cups flour and 1-1/2 tsp. salt. Make a well in flour; add 1 egg. Gradually stir 1/4 cup chicken broth into egg with fork, incorporating flour from sides as you go. Continue until flour is used up and dough is consistency of pie dough. Turn dough onto floured surface; knead in additional flour to make a stiff dough. Let rest 15 minutes.
On a floured surface, roll dough into a 17-in. square. Cut into 1-in. squares. Dust with additional flour. Let dry 30-60 minutes.
Drop dumplings into boiling soup broth. Reduce heat; cover and simmer until dumplings are cooked through, about 10 minutes.
