how to proceed with sprouted garlic

The green sprouts are a sign that garlic is getting old. Shoots can also start growing if you've exposed the head to heat, light or moisture. Despite this, sprouted garlic is perfectly safe to eat, unlike, say,
sprouted potatoes
. In fact, a study found that sprouted garlic has significantly higher levels of antioxidants than fresher garlic. So, it really comes down to personal preference whether you utilize sprouted garlic.
If you'd like to be extra cautious, inspect the garlic further. If it smells unpleasant, feels squishy or looks discolored, simply discard it.
