Tart tomato, crisp celery, hot sauce, soy and vinegar: a perfectly balanced summer salad.

Bloody Mary tomato salad is just as good as it sounds |
Because we know you're wondering: No, there's no vodka in Hetty McKinnon's Bloody Mary tomato salad. But her recipe nails the flavors and textures of the classic cocktail, with juicy tomatoes, crisp celery and sharp onion in a tangy dressing spiked with hot sauce. Instead of Worcestershire sauce, Hetty uses a combination of soy sauce and balsamic vinegar for that hit of umami, making her salad vegan. |
Also vegan is Denai Moore's melon and cho cho salad, a new recipe adapted by Bryan Washington for The New York Times Magazine. If you have trouble finding chayote (the cho cho), you could sub in slices of crunchy jicama or cucumber, or add in more of your favorite melon. The recipe's combination of refreshing fruit, green herbs, acidic dressing and nutty crunch is both flexible and unbeatable. |
If you haven't already discovered Eric Kim's tuna mayo rice bowl, let us introduce you to your new lunchtime (or dinner) hero. Play up the simple base of canned tuna, mayo, soy and sesame oil however you (or the kids) please: top with furikake or sliced scallions, stir in chopped cucumber or radish, add sliced avocado or tomato. If you have a rice cooker, this is a no-cook meal — a blessing for these hot, lazy summer days.
