This time of year, my Dutch oven sees a lot of action. I use this enameled pot to make soups, stews and low-and-slow meals. It's also the perfect vessel for making bread. This recipe is one of my favorites because it requires no kneading (really!) and bakes up with a wonderful crust and crinkly, crackly top. —Lisa, Bakeable Editor

How to Proof Yeast
Some bakers are afraid of using yeast, but know that proofing it is actually easy! To activate the yeast, add it to warm water (about 105ºF) with a few teaspoons of sugar. The warmth and the sugar will help wake up and feed the yeast so it's ready to leaven your loaves.
