How Do You Brown Butter?
Apples and pumpkins get all the attention this time of year, but there's another way to infuse fall feelings into your baked goods. Browned butter adds a warm, toasty nuttiness to whatever it touches.
To brown butter
, first melt butter in a saucepan over medium heat. As soon as it begins melting, stir gently so that none of the milk solids stick to the bottom of the pan. The butter will start foaming and turning bubbly. The butter will slowly change color from pale yellow, deepening to a tan hue. Once it's the desired brown color (you'll also be able to smell the nutty aroma), remove the butter from the saucepan and pour into a heatproof bowl to cool.
You can use browned butter in any recipe that calls for butter. It's especially good in cookies and blondies.
