| I eat basically the same lunch every day: a big ol' bowl of kale salad. I might switch up the mix-ins depending on what's in season and the bits and bobs we have in the fridge—leftover roasted squash, rotisserie chicken—but I always start with a few handfuls of baby kale (or red, or curly, or dinosaur...). With spring getting closer, I'm inspired to freshen up my lunch routine. That's why I'm thrilled that we just announced our "Let's Do Lunch" contest winners. While I'd never abandon my beloved kale salad, when I'm craving something new, I know I have award-winning options, from Stephanie Luc's first-place Korean chicken Crunch Wraps to Lori Stefanishion's spanakopita croissants. If you're wondering how we land on these winners, here's a peek behind the curtain: Home cooks submit hundreds (and hundreds!) of recipes to each contest. Our recipe editor/tester, Maggie Knoebel, reads through every single one and tests the dishes that rise to the top. Then our culinary team and local editors taste the finished recipes and rate them on flavor, appearance, technique and originality. (This can be a very tough job!) We take glamour shots of the top 12 recipes in our studio—and yes, we get to eat them again. Finally, we send out the prizes to our winners and publish their recipes on our site and in the magazine. We're catching our breath between contests at the moment, but our next one kicks off on March 1 (keep an eye on our contest hub to see the announcement).
