Butter Swim Biscuits
There are many, many types of biscuits in the world: flaky, mile-high, buttery, dropped, rolled. I think they're all delicious. The one we're focusing on this month is the butter swim variety. These biscuits are crispy on the outside and fluffy on the inside. The dough comes together super quick, and then "swims" in a pool of butter as it bakes. Bakeable member Marie M. asked for suggestions on how to make a good biscuit. Our community swooped in with tons of tips for her. The most common piece of advice was to not overwork the dough. Doing so warms the butter and results in a dense biscuit. To avoid needing to work the dough at all, make butter swim biscuits! This method calls for pressing the dough directly into the pan—no kneading or rolling required.
