I was snacking on raw kale in the early '90s, long before it was trendy, simply because I knew it was good for me. Years later, I took daily shots of yerba mate—and winced after every single one. My young daughter once stared at me, confused, convinced it was melted chocolate and wondering why I wasn't smiling. I've never really shied away from "healthy" foods, even when they weren't especially fun.
Kimchi, though, is different. I actually eat this Korean condiment because I crave it. Salty, funky, spicy and alive, it wakes everything up.
