The other day, I wanted to bake something simple for breakfast. I noticed a gorgeous Dutch baby as I was flipping through our latest Bread issue. Surprisingly, I had never made a Dutch baby before! I was happy to cross it off my bucket list.
I enjoyed watching it puff up in the oven. Just remember to move the other rack to the highest position so the batter has enough clearance!

Slice a banana in half lengthwise. Then, sprinkle about a tablespoon of sugar over each cut side. Hit the sugar-coated bananas with a kitchen torch until the sugar melts, bubbles and sets into a thin, caramelized shell.
